Bok Choy is one of the most popular microgreens Seeds. Bok Choy is a pale green microgreen with a slightly sweet, robust flavor. Bok Choy is  also known as Chinese Cabbage. Bok Choy microgreens are the mini version of the popular vegetable commonly used in Asian dishes. This beautiful microgreen has white stems and green leaves. It is a great source of vitamins B2, B6, C, A, K, beta carotene, folic acid, iron, calcium, manganese, magnesium, thiamin, niacin, phosphorus, potassium, selenium and zinc. 

Selecting Seeds
Choose high-quality Bok Choy microgreen seeds. Make sure they are specifically labeled for microgreen production.

Planting Medium
Fill a shallow tray or container with a soilless growing medium. Common choices include coconut coir, peat moss or a seed-starting mix.

Sowing Seeds
Sprinkle Bok Choy seeds evenly across the surface of the growing medium. Press them down gently to ensure good seed-to-soil contact.

Watering
Water the seeds thoroughly after planting. Keep the soil consistently moist, but avoid waterlogging.

Covering Seeds
Optionally, cover the seeds with a thin layer of soil or vermiculite. This helps with moisture retention and seed germination.

Providing Light
Place the tray in a location with indirect sunlight or under grow lights. Bok Choy microgreens don't require direct sun but need good light for healthy growth.

Germination
Bok Choy seeds will germinate in about 3 to 5 days. Once the seedlings are a few inches tall, they are ready for the next step.

Harvesting
• Harvest Bok Choy microgreens when they reach a height of 5-10 cm. Use scissors to cut them just above the soil level.
• Incorporate freshly harvested Bok Choy microgreens into salads, stir-fries, sandwiches or as a nutritious garnish for various dishes.
